New restaurant for Hotham in 2015

North East Victoria’s Michael Ryan and Jeanette Henderson of two-hat Provenance Restaurant in Beechworth, and Hamish Nugent and Rachel Reed of chef’s hat Tani Eat & Drink in Bright are getting back together again to launch a new restaurant at Mt Hotham this snow season.

The new restaurant, Yama Kitchen and Bar, is in the space that was The White Room at Hotham Central. Doors will open on Monday 22 June ahead of the Winter school holidays.

The two couples previously collaborated at Range in Myrtleford, Tsubo in Dinner Plain and at a restaurant in Hakuba in Japan.

“We’re getting the band back together. Yama means ‘mountain’ in Japanese so you’ll certainly see some shared influences from Japanese cuisine but also broader Asian flavours and techniques.” Michael Ryan said.

“We’ll be taking a shared approach to dining, the way friends love to eat after a day on the slopes – and of course some fun apres-ski bar snacks.”

The menu will feature:

  • Larger dishes to share, such as; slow-roasted suckling lamb leg with Szechuan spices, grass-fed rib eye with smoked miso butter or whole roasted duck
  • Lots of smaller dishes guests may want to share or keep for themselves; silken tofu with XO sauce, smoked carrots with yoghurt, fried Brussels sprouts with miso powder, cured fish with shio koji, and
  • Fun bar food; kimchi and cheese jaffle, fried pickles, salted caramel and bacon popcorn, steamed buns, sweet crab roll.

With their respective restaurants on the doorstep of Victoria's snowfields, they saw an opportunity to play with a different style of menu to their sub-alpine restaurants.


"We all love the snow and saw an opportunity to bring something different to Hotham's dining offering. A fun informal eatery and a bar where people, like us, can enjoy a quality drink in a relaxed space" Hamish Nugent said.

The drinks list feature beers you may or may not have heard of, a concise wine selection and classic cocktails.

The restaurant will be open seven nights and lunch Thursday to Sunday. Provenance and Tani will remain open as usual.
